Have you ever been to Elyria, Nebraska? Like many small towns in rural Nebraska, it seems like it might be just a wide spot in the road – but there’s a very unique surprise in this spot!
When Roy Farrens was in culinary college 20 years ago he thought that a greenhouse to grow produce and herbs would be a key component for his dream restaurant. He is living that dream in the unlikely location of Elyria, where wife Lisa’s parents had owned the greenhouse business for many years.
The menu focuses on sauces created from produce that was grown right in Elyria. The slow, local food movement is alive and well on the edge of the Nebraska Sandhills! Their menu emphasizes healthy, fresh food and Farrens emphasizes fresh and local, from eggs to meat to the products from his greenhouse.
